Sweet Harvest Pumpkin Seeds

I like roasting my pumpkin seeds a little different (and sweeter) than the traditional recipe. And these were just as popular!

Ingredients:

Pumpkin seeds from 1 pumpkin

1 tbsp white sugar

1 tsp brown sugar

2 tbsp oil

¼ tsp salt

½ tsp ground cloves

½ tsp ground allspice

½ tsp ground cinnamon

Instructions:

  1. Wash and dry pumpkin seeds, then place in small bowl.
  2. Mix with oil, salt, cloves, allspice cinnamon, brown sugar, and ½ the white sugar.
  3. Bake at 350 for about 7-10 minutes. Remove, mix around, then put them in for another 7-10 minutes. Watch them closely so they don’t burn!
  4. Remove from oven, then mix with the remaining sugar. Allow to cool a few minutes before serving.

Pumpkin/ Butternut Squash Pie

Ingredients for Simple Pie Crust

1 ¼ cup white flour

¼ tsp salt

½ cup cold shortening

3 tbsp ice water

Instructions:

  1. Whisk flour and salt in large bowl. Add shortening, cut up and mix in with the flour to make the mixture crumbly.
  2. Drip the water over and mix with fork to form dough.
  3. Gather in a ball and wrap with plastic wrap. Chill 30 minutes,
  4. Roll out dough and press into pie pan to form crust.

Ingredients For Filling:

1 pumpkin (any variety) OR butternut squash

1 ¼  cup milk

2 large eggs

1 tsp vanilla

2 tbsp oil

¼ cup white sugar

¼ cup brown sugar

¼ cup honey

½ tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground cloves

½ tsp ground allspice

Instructions:

  1. Cut the pumpkin/ squash into small pieces (about 16). Remove seeds and stringy insides. Boil in water on high in large saucepan until soft.
  2. Allow to cool, then remove skin. Mash up in bowl. Add all the filling ingredients and mix well. Pour into prepared pie crust.
  3. Bake at 350 for 45 minutes to an hour, depending on the oven. Pie is usually finished when the surface is darkened.

Fried Mushroom Burgers With Green Onion Avocado Relish

I loved making these. Made them for the first time when I had a couple friends over, and they were thrilled with them! It makes a nice end to the barbeque season.

Ingredients:

8-12 Sesame seed burger buns

2-3 pkgs ground beef

5 stalks green onion, sliced thin

1 avocado, mashed in small bowl

1-2 tbsp lemon juice

1 small pkg button mushrooms, sliced

½ white onion, sliced

Instructions:

  1. Shape the ground beef into burgers and grill on the barbeque with your favourite BBQ sauce.
  2. While burgers are cooking, heat a frying pan on medium heat. Add oil and toss in mushrooms and onions. Saute about 10 minutes.
  3. Slice the green onion into thin slices. Cut the avocado, remove the seed in the middle, then scoop the insides out into a small bowl. Mash the avocado up. Mix green onion slices and lemon juice in the bowl.
  4. Once burgers are ready, place them in buns. Add green onion/avocado relish and sautéed mushrooms. Serve with sweet potato fries.

Turkey Avocado Quesadilla

If you have one of those small counter top grills, they’re perfect for grilling and melting the cheese in a quesadilla. It keeps the pita crisp, easy to cut, dip and handle.

Ingredients:

  • 6-8 pitas (the thick fluffy kind)
  • 1 cup grated cheese
  • 1 cup ground turkey
  • 1/2 chopped onion
  • 1/2 large avocado, diced
  • 6-8 button mushrooms sliced vertically
  • 1/2 red pepper pepper, diced
  • 1 pkg fajita or taco sauce
  • (optional) sour cream or salsa

Instructions:

  • Heat a frying pan on medium heat. Add oil. Cook the ground turkey until browned
  • Add onion, mushrooms and pepper. Cook 5-10 minutes. Mix fajita/taco sauce in.
  • Heat grill. Distribute turkey-veggie mix among all the pitas. Distribute cheese and avocado to each pita. (For best results, put a bit of cheese before adding the meat, and top off with cheese so that it melts together and keeps the insides stuck together better).
  • Fold in half, then place in grill. Takes about 5 to 10 minutes. Check every couple minutes and remove once the sides are browned a bit.
  • For spicier quesadillas, mix some hot sauce and red pepper flakes into the cooking turkey
  • Cut pitas in half and serve with sour cream/salsa

Mushroom Garlic Potato Roast

 

 

This makes a great dinner side dish that I love cooking when the weather starts to get cooler, and can make a great addition to any holiday dinner such as Thanksgiving and Christmas.

 

 

Ingredients:

  • 4-6 potatoes (Russet or baking)
  • 3-4 Garlic sprouts, sliced
  • 5-8 Button mushrooms, sliced vertically
  • 5 tbsp butter OR olive oil OR both
  • dash of salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic & herb seasoning
  • 1 tbsp fresh rosemary (or basil, thyme, parsley)

Instructions:

  1. Preheat oven to 375
  2. Slice potatoes into thin circles.
  3. Brush oil onto the bottom of a bread baking dish
  4. Arrange potatoes vertically stacked beside each other into 2 rows
  5. Sprinkle with sliced garlic sprouts and mushrooms, wedging some of them in between the potatoes
  6. Brush the potatoes with the remaining oil
  7. Sprinkle with salt, pepper, seasoning and fresh herbs
  8. Bake 45 minutes or until potatoes are fully cooked.
